5 things you can do with a lemon part 1

Ever have a lemon fruit left over and wonder what to do with it ?
Here are 5 ideas to make use of it, rather than let it go mouldy in the fridge (or go out with the trash)

1. Smell it - Put some lemon juice and water in a spray bottle, you can then use it as a room freshner.

2. Wash it - You can add a drop of lemon juice to your washing up, when doing greasy pans.

3. Gargle it - Take the juice of a lemon mix with water and a pinch of salt and garlgle as a mouth freshener.

4. Squeeze it - Squeeze a dash of lemon on fruit or salad (like iceberg lettuce) and it will help stop it wilting or losing crispy / freshness.

5. Steam it - Stick some lemon juice in a microwave bowl with water, boil the water for enough time that the steam gives the inside of the microwave a good steam bath, then after carefully removing the water, wipe down microwave walls with clean cloth.

Lemon Chicken Classic

Ingredients
2 whole chicken
1 tbsp. vegetable oil
1 egg
300 Chicken Recipes
2 tsp. cornstarch
1 tsp. salt
1 tsp. soy sauce (light or dark)
1/4 tsp. white pepper
Vegetable oil
1/4 c. all-purpose flour
1/4 c. water
2 tbsp. cornstarch
2 tbsp. vegetable oil
1/4 tsp. baking soda
1/4 tsp. salt
1/2 c. chicken broth
1/4 c. honey
3 tbsp. lemon juice
2 tbsp. light corn syrup
2 tbsp. vinegar
1 tbsp. vegetable oil
1 tbsp. catsup
1 clove garlic, finely chopped
1/2 tsp. salt
Dash of white pepper
Peel of 1/2 lemon
1 tbsp. cornstarch
1 tbsp. cold water
1/2 lemon, thinly sliced

Preparation

Remove bones and skin from chicken; cut each breast into fourths. Place chicken in shallow glass or plastic dish. Mix 1 tablespoon vegetable oil, the egg, 2 teaspoons cornstarch, 1 teaspoon salt, the soy sauce, and 1/4 teaspoon white pepper; pour over chicken.

Turn chicken to coat both sides. Cover and refrigerate 30 minutes. Remove chicken from marinade; reserve marinade.

Heat vegetable oil (1 1/2 inches) in wok to 350 degrees. Mix reserved marinade, the flour, 1/4 cup water, 2 tablespoons cornstarch, 2 tablespoons vegetable oil, the baking soda and 1/4 teaspoon salt. Dip chicken pieces one at a time into batter.

Fry 2 pieces at a time until light brown, 3 minutes. Drain on paper towel. Increase oil temperature to 375 degrees. Fry chicken all at one time until golden brown, turning once, about 2 minutes. Drain on paper towel.

Cut each piece crosswise into 5 or 6 pieces; place in single layer on heated platter. Heat chicken broth, honey, lemon juice, corn syrup, vinegar, 1 tablespoon vegetable oil, catsup, garlic, 1/2 teaspoon salt, dash of white pepper and the lemon peel to boiling.

Mix 1tblsp cornstarch and 1 tblsp water; stir into sauce. Cook and stir until thickened, about 10 seconds. Remove lemon peel. Garnish with lemon slices; pour sauce over chicken.

This Lemon Chicken Classic recipe makes 8 servings.

This authentic Greek Lemon Chicken recipe is a marvel of texture and flavor. Simple ingredients matched perfectly with one another, resulting in what can be considered to be a restaurant quality dish.

Greek Lemon Chicken

Ingredients
MARINADE

1 c. fruity white wine
1/4 c. olive oil
1/4 c. fresh lemon juice
300 Chicken Recipes
1 tsp. lemon peel, freshly grated
1 tsp. salt
1 tsp. freshly ground black pepper
3 cloves garlic, crushed

6 whole lg. chicken breasts, boned and skinned
3 tbsp. olive oil
2 tbsp. butter
2 tbsp. all-purpose flour
1/2 tsp. salt
2 tsp. prepared mustard
1 c. milk
2 egg yolks
Freshly grated peel of 1 lemon
1 tsp. fresh lemon juice
1 tsp. dried dillweed
1/4 c. fresh parsley, minced
1 c. sour cream
1/4 c. butter, melted
1/2 c. feta cheese, crumbled
1 lb. angel hair pasta, cooked al dente and kept warm
1/2 c. muenster cheese, shredded

Preparation

In a bowl, combine all marinade ingredients. Pound chicken breasts slightly and place in shallow casserole or in plastic Ziploc bags, and cover with marinade. Refrigerate for up to 12 hours. Discard marinade. Heat oil in skillet and saute chicken until tender. Slice and set aside.

In saucepan, melt 2 tablespoons butter; and blend in flour and salt to create a roux. Add mustard and slowly add milk, stirring constantly until thick and smooth. In small bowl, mix egg yolk, lemon peel and lemon juice together.

Whisk a small amount of roux into egg mixture. Then whisk egg mixture into roux and bring to a gentle boil. Remove from heat and add dill and parsley. When parsley wilts, stir in Sour cream.

Add 1/4 cup butter, 3/4 cup of the egg sauce and feta cheese to cooked pasta; stir well. Place in greased 9" x 13" casserole and top with sliced chicken, remaining sauce and cheese. Broil until the cheese is golden brown.

Serves 6 to 8.
